I TATTOLI: “IN OUR OIL, YOU WILL FIND THE HILLS AND THE EMOTION OF CHIANTI”
Discovering the Best Olio Dop 2022: according to the Bini Smaghi family, the podium is the sum of an ancient passion and a contemporary vision.
When an EVO oil reaches the top rating by becoming “Best DOP Oil” in the Gambero Rosso’s Oli D’Italia Guide, it is certainly no accident but rather the result of a reasoned and tenacious combination of factors. Speak-ing with Cristina Gazzana Bini Smaghi, who together with her husband Simone runs the “I Tattoli” estate, the picture is im-mediately clear. The estate has been family-owned since the 1400s. For the past 8 years or so, however, with the awareness that they have with their oil a priceless value on their hands, the desire to make it shine has also grown. In San Casciano Val Di Pesa, the estate has 50 hectares: forest, vines, and olive trees. The extra virgin olive oil gave to the entire family much satisfaction. Moraiolo, Leccio del Corno, Pendolino, Frantoio and Correggiolo: these are the varieties for a classic blend, the jewel that has brought the company to the forefront of the national and international oil scene. Cristina is enthusiastic and serious: she is Milanese by origin, but in love with Tuscany and the new profession for which she studied and trained, “The olives are harvested with-in 4 hours and taken to the mill, which operates in the absence of oxy-gen. The oil stands out for its freshness and longevity. This is due to our hilly, south-facing loca-tion with a unique combination of air, sunshine and ter-roir.” Mowed grass, artichoke, thistle, arugula, unripe ap-ple, pine nut: this is the aromatic range of this oil, that is a true masterpiece which has only just begun to be talked about.
